Long Tail Tuna Crudo
Alright legends, this recipe is an absolute cracker and super easy to make!
I made this with long-tail tuna but we have also made it in the past with coral trout and kingfish.
Also “Crudo” is the Italian and Spanish word for “raw,” and it refers to a dish of uncooked stuff — usually fish, shellfish, or meat — dressed with some sort of seasoning, such as olive oil, citrus juice, and/or a vinaigrette-type situation.
On that note, let’s jump in and make this.
Ingredients: 500g Long-tail tuna 1/2 Spanish onion 1 long red chilli (seeded) 1/2 medium Fennel 2 Tomato’s (seeded)
For the dressing; 20ml Sherry vinegar 1/4 line (juice) Pinch sugar 60ml extra virgin olive oil Flaked salt
Method:
Slice the tuna thinly and lay evenly over your serving plate. Then lightly season the fish with salt flakes.
Chop all ingredients as finely and uniform as you can then season lightly with salt and put aside.
Whisk your wet ingredients together with your sugar and salt.
Pour dressing over your vegetables.
Let this marinate together for around 5 minutes.
Taste everything; the tuna should taste seasoned and delicious same as your dressed vegetables.
Now evenly spread your dressing mix over your tuna, garnish with fresh coriander and serve!
This meal is fantastic and easy meal to eat during the day with some white wine or a cold beer!
